Moda Restaurant has launched a providore selection and is offering a new pick up and delivery menu including Javier's famous Queensland seafood paella.
Occupying the historic Police Barracks stables in Petrie Terrace, Moda the boutique Spanish restaurant led by chef, Javier Codina and front of house host, François Le Savéant are doing their best to keep their staff employed while making sure their loyal customers can still enjoy their favourites from a menu inspired by Javier’s Catalan heritage in the comfort of their own home.

WILLIAMS MEDIA spoke to François Le Savéant about Moda’s strategy for supporting their staff and maintaining their restaurant during lock-down.
“Some of our very generous customers have employed a number of our international staff in different jobs as an act of ongoing support to us. A small team, including our apprentice chef are ensuring the seamless operation of our new pick up and delivery business.”
The Moda menu has been selectively trimmed down to suit transportation and by following a few simple instructions can easily be reheated and served at home.
To ensure quality control and maintain strict hygiene policies François handles most of the deliveries himself, with additional help from trained Moda staff on busy weekend evenings. “We have orders from all over Brisbane. Sometimes we travel over 20km in any direction, last night I drove from Pullenvale to Virginia and tonight I have deliveries in Chappel Hill, Bardon and Indooroopilly."

"Javier has a fantastic sous vide machine which allows our fabulous protein dinners including our popular wagyu beef brisket to be enjoyed at home, simply by reheating the sous vide bag in boiling water. While Javier’s famous Queensland seafood paella has been modified to a serve for one” François went on to say.
Javier visits the markets before dawn to personally select the best ingredients for his menu. For over ten years he has built relationships with growers and suppliers of fresh produce and has been a great ambassador for the produce sourced from Queensland’s Scenic Rim.

“Last week we launched our providore section at the front of the restaurant. Customers can purchase Javier’s Ciabatta, baked daily as well as fabulous Spanish wines from our wine list, olive oil and other goodies.

To help our long-term growers and suppliers we are in the process of organising deliveries of fresh produce to Moda to add to our providore section, so soon customers collecting their own take away meals can add fresh produce to their shop.”

François added, “As Winston Churchill once said, ‘When you’re going through hell, just keep going…’ Although the long term support is not quantified as yet, our landlord has fortunately so far been supportive.”
